Caramelized Peaches with Thyme Honey and Gorgonzola Mousse
This exquisite composition combines the sweetness of perfectly ripe peaches with the savory depth of forest honey and a creamy, salty note of Gorgonzola. A touch of fresh thyme adds a herbal accent that perfectly rounds out the interplay between fruit and spice.

- 4 piecesripe peaches
- 50 gbutter
- 2 tbspforest honey
- 3 sprigsfresh thyme
- 150 gmild Gorgonzola Dolce
- 100 gmascarpone
- 50 mlheavy cream
- 30 gtoasted pine nuts
- 1 pinchsea salt

- 1Whisk the Gorgonzola with the mascarpone and heavy cream in a bowl until smooth to create a creamy mousse, then chill until ready to serve.
- 2Wash the peaches, halve them, remove the pits, and cut the fruit into even wedges.
- 3Melt the butter in a large pan over medium heat and sear the peach wedges for about 2 to 3 minutes on each side until golden brown.
- 4Add the honey and the plucked thyme leaves to the peaches and let them caramelize briefly until the liquid becomes syrupy.
- 5Toast the pine nuts in a small dry pan until golden brown and fragrant.
- 6Arrange the warm peach wedges on plates, place a generous dollop of the Gorgonzola mousse on the side, and sprinkle with the toasted pine nuts and a pinch of sea salt.
