Scallops on Lime-Ginger Sauce with Apple-Fennel Salad
Tenderly seared scallops meet a creamy, fresh lime sauce with a gentle kick of ginger, balanced by a crisp salad of green apple and fennel.

- 8 piecesScallops
- 50 gramsCold butter
- 1 pieceShallot
- 100 millilitersHeavy cream
- 20 millilitersLime juice
- 10 gramsFresh ginger
- 1 pieceGreen apple (Granny Smith)
- 0,5 pieceFennel bulb
- 2 tablespoonsHigh-quality olive oil
- 1 pinchSea salt
- 1 pinchWhite pepper
Preparation: 25 minutes
Preparation
- 1Finely dice the shallot and ginger, then sauté until translucent in a small saucepan with one teaspoon of butter.
- 2Deglaze with the lime juice, add the cream, and reduce the liquid by half over medium heat.
- 3Strain the sauce through a fine-mesh sieve, whisk in the remaining cold butter in small pieces (mounting), and keep warm.
- 4Cut the green apple and fennel into extremely fine strips (julienne) and marinate in a bowl with olive oil and a pinch of salt.
- 5Pat the scallops dry, season with salt, and sear in a very hot pan with a little oil for about 90 seconds on each side until golden brown.
- 6Spread the lime-ginger sauce as a base on flat plates, arrange the apple-fennel salad on top, and finish by placing the scallops over the salad.
