Baked Goat Cheese Tartlets with Forest Honey and Crispy Bacon
These elegant tartlets combine the creamy mildness of fresh goat cheese with the salty intensity of crispy bacon and the natural sweetness of aromatic forest honey. A touch of fresh thyme and crunchy walnuts perfectly rounds off this sophisticated play of textures.

- 275 grefrigerated puff pastry
- 200 gfresh goat cheese
- 100 gthinly sliced bacon
- 3 tbspforest honey
- 4 sprigsfresh thyme
- 40 gwalnut kernels
- 1 pieceegg
- 1 pinchblack pepper
Preparation: 30 minutes
Preparation
- 1Preheat the oven to 200°C (top/bottom heat) and line a baking sheet with parchment paper.
- 2Unroll the puff pastry and cut it into approximately 10 equal squares or circles.
- 3Fry the bacon slices in a pan without adding extra fat until crispy, drain on paper towels, and then break into rough pieces.
- 4Place a generous dollop of goat cheese in the center of each puff pastry piece, leaving about a 1 cm border around the edge.
- 5Whisk the egg and brush the free edges of the puff pastry with it.
- 6Bake the tartlets in the oven for about 12-15 minutes until golden brown and the pastry has puffed up nicely.
- 7Meanwhile, coarsely chop the walnut kernels and briefly toast them in the residual heat of the bacon pan.
- 8Remove the tartlets from the oven and immediately sprinkle with the bacon pieces and walnuts.
- 9Drizzle the liquid forest honey over the cheese.
- 10Garnish with freshly picked thyme leaves and a pinch of pepper, then serve warm.
