Tender Chicken Saltimbocca on Warm Lemon Orzo Salad with Toasted Pine Nuts
This dish combines the savory depth of air-dried Parma ham and fresh sage with the zesty lightness of a Mediterranean pasta salad. The toasted pine nuts add a sophisticated nutty note that perfectly balances the interplay of saltiness and bright acidity.

- 400 gChicken breast fillet
- 4 slicesParma ham
- 8 piecesFresh sage leaves
- 200 gOrzo pasta (Risoni)
- 1 pieceOrganic lemon
- 30 gPine nuts
- 50 gBaby spinach
- 500 mlChicken broth
- 4 tbspOlive oil
- 20 gButter
- 1 pinchSea salt and pepper

- 1Toast the pine nuts in a dry pan over medium heat until golden brown and fragrant, then remove from the pan immediately.
- 2Cook the orzo pasta in the chicken broth according to package instructions until al dente. Drain, let steam dry for a moment, and transfer to a bowl.
- 3Finely zest the organic lemon and juice it. Mix both into the warm pasta along with 2 tbsp of olive oil.
- 4Pound the chicken breast fillets flat, halve them, and season with pepper. Top each piece with a sage leaf and a slice of Parma ham, securing with a toothpick.
- 5Heat the butter and the remaining olive oil in a pan. Sear the chicken ham-side down for about 3 minutes, then flip and cook for another 2-3 minutes until done.
- 6Fold the fresh baby spinach into the warm orzo pasta until slightly wilted. Season to taste with salt and pepper.
- 7Arrange the orzo salad on plates, place the Saltimbocca pieces on top, and sprinkle generously with the toasted pine nuts.
