Tender Chicken in Peach Curry Sauce
This dish combines succulent chicken breast with a fruity, spicy sauce made from sun-ripened peaches and fine curry, perfectly complemented by buttered rice and toasted notes.

- 500 gchicken breast fillet
- 250 gbasmati rice
- 300 gpeaches (fresh or canned)
- 200 mlcream
- 150 mlchicken stock
- 30 gbutter
- 40 gsliced almonds
- 1 pieceonion
- 1 tbspmild curry powder
- 2 tbspvegetable oil
- 1 pinchsalt and pepper
Preparation: 35 minutes

- 1Cook the basmati rice in lightly salted water according to the package instructions, then stir in the butter after draining.
- 2Toast the sliced almonds in a dry pan over medium heat until golden brown and set aside for garnish.
- 3Cut the chicken breast into bite-sized pieces, season with salt and pepper, and sear quickly in a pan with oil.
- 4Remove the meat from the pan and sauté the finely diced onion in the remaining fat until translucent.
- 5Dust the curry powder over the onions, toast briefly, and deglaze with chicken stock and cream.
- 6Simmer the sauce over medium heat for about 5 to 7 minutes until it reaches a creamy consistency.
- 7Slice the peaches into wedges, add them along with the chicken to the sauce, and let everything gently poach for 3 minutes.
- 8Serve the buttered rice on plates, add the curry chicken, and sprinkle generously with the toasted almonds.
